This pistachio cheesecake is of the “goodies inside” variety, and it involves that amazing pistachio paste I mentioned earlier. Using greased and floured pans instead of parchment paper shouldn't make a difference to the recipe so I don't think it's that. But if you can't find it you can easily make it at home with just a bag of pistachios and a food processor. Once the cheesecake is cooled, wrap it tightly with plastic wrap and chill it in the fridge for at least 6 hours, ideally overnight.Pistachios are softer and have a slightly sweeter taste than almonds, so they may affect the overall taste and texture of the dish.
